Laws Whiskey House ages their whiskey in 53-gallon charred American White Oak barrels for a minimum of 2 years. They use heirloom grains, sourced from family-owned Colorado farms, which are milled, cooked, fermented, distilled, and aged on-site. Using a copper pot-column still in the production of their whiskey, they practice open air, on-grain fermentation, using grains grown at high altitudes and mountain spring water.
Bottled at 118 proof (59% ABV), Laws Intention Straight Bourbon Whiskey has a mash bill that consists of 60% corn, 20% heirloom wheat, 10% heirloom rye, and 10% heirloom malted barley. The distillery hand selected and combined barrels that range from three to ten years old at cask strength. This expression represents the first vertical marriage of their signature Four Grain Straight Bourbon and is the first release from the Laws Whiskey House annual Origins Series tradition.
In a prepared statement, Al Laws, President and Founder of Laws Whiskey House, said, “Intention is really special to us. It’s symbolic of how we approach our work and how we make whiskey. We are making whiskeys that are intentionally bold, flavorful, and distinct. Intention shows how versatile our four grain mash bill is, especially when explored across a range of barrel ages.” He added, “This is the first time we created a whiskey made from barrels of dramatically different ages,” and that “Most of our whiskeys are made with barrels of the same or similar lot year. With Intention, we had the opportunity to balance flavors in an entirely different way.”
One example of Laws Whiskey House’s highly awarded whiskey is their A.D.
